Jalapeno Cheddar Burritos
Spicy and cheesy, these Mexican inspired burritos incorporate unique tastes and textures. Whether made ahead and reheated, or cooked and assembled right before meal time, they will be a new family favourite. Use Ontario Jalapeno and Cheddar Smoked Sausages for best results.
Beer Pairing Suggestions
An Ontario India Pale Ale such as: Maclean’s Pale Ale, Heritage Brewery’s Sgt. Major IPA; or Granite’s Ringwood Ale to compliment the spicy recipe.

| 4 | 10-inch (25 cm) flour tortillas | 4 |
| 1 cup | shredded lettuce | 250 mL |
| 1 cup | plum tomatoes, diced | 250 mL |
| 1/2 cup | sliced avocado | 125 mL |
| 1/4 cup | chopped fresh cilantro | 50 mL |
| 2 tbsp | sour cream | 30 mL |
| 1/2 cup | prepared salsa | 125 mL |
Grill sausages according to the package instructions.
In a large dry skillet, over medium heat, warm the tortillas one by one, turning once, until pale golden on both sides, about 30 seconds per side.
Arrange each warmed tortilla over 4 plates. Top each with a grilled sausage. Sprinkle with lettuce, plum tomatoes, avocado, cilantro and sour cream. Fold in sides and roll up to enclose filling. Serve with salsa.
Makes 4 servings.
Innovative: Substitute prepared guacamole for the avocado if yours isn’t ripe and omit the sour cream.
Tip: Warming the tortillas in a pan before rolling will bring back a “fresh baked” flavour and texture.
